basic food safety practices that are essential in the leisure, hospitality and
licensing industries. This includes the hazards and risks to food safety presented by personnel during food preparation and other associated operations as well as
incorporating practical control measures.
Those who operate in a supervisory role in the workplace need to be aware of
their responsibilities with regards to food safety. The majority of food poisoning
outbreaks can be traced back to the failure of those responsible for
communicating and implementing hygiene standards.
